About: Incredible Pet Nat from Nicolas Einhart. 70% Sylvaner, 30% Gewurtztraminer with 4 days maceration, then pressed off into tank. As with all Pet Nats, this has been bottled before the sugars finish fermentation - to give bubbles in the bottle. Bright, zippy and refreshing with stunning aromatics and a good balance of acidity. This is simply a lovely and must try fizz.
