A direct pressing of Pinot Noir, Dornfelder and Domina from 30 year old vines growing on marl and limestone soils. Pinot Noir being a well known international varietal, here blended with two lesser known grapes indigenous to Germany. Dornfelder was created by crossing Helfensteiner and Heroldrebe in 1956, and Domina crossed Blauer Portugieser with Pinot Noir in 1927.
Grapes are hand-harvested, then direct pressed to 10-year-old 1250 liter barrels with an 80-year-old basket press. Juice ferments spontaneously and is left for 10 months on the full lees in barrels. The wine is bottled unfined, unfiltered, and with zero addition of sulfur.
