About: The grapes are picked from hillside vineyards by the Cordes Plateau, overlooking the Pyrenees mountains. The soil is almost entirely soft white clay. The climate is warm and Mediterranean, but the altitude allows the grapes to retain acidity.
The grapes are hand harvested and softly pressed whole bunch. After coldsoaking, fermentation is with natural yeasts in stainless steel tanks . Wines age on fine lees for six months before bottling without fining and just a gentle press filtration.
