About: Grapes are hand-harvested, collected in small baskets and transported back to the winery, where they are partially de-stemmed. Fermentation is in 3000-litre cement tanks, with 25% of the grapes fermented whole-bunch; the ferment never passes 26 degrees Celsius, and they extract gently, using daily piggeages, After 30 days the wine is racked back into the cement tanks and rests for 6 months before bottling without fining or filtration.
Grapes are sourced from a single vineyard in the sub-region of Los Chacayes; the vineyard is planted at 1250 metres above sea level, with 15-year-old vines. The vines are traditionally trellised. Soils are a mix of alluvial sand and gravel.
