About: The grapes are destemmed and fermented in concrete. Maceration is for 2-3 weeks, light extraction with no punchdowns (a few pumpovers). Following pressing, the wine is mostly aged in concrete with a small part aging in steel and about 10% of it in 225L barrels. The wine aged on its lees for 10 months and was bottled with a tiny sulphite addition. Unfined, unfiltered.
All of the grapes come from their own vineyards, and all within Trespoux-Rassiels in the Cahors appellation. This is at the highest altitude in the region, roughly 340-360m, a point that experiences a very high diurnal range and hence leads to a wonderful freshness in the wines. The Malbec for Trespotz comes from across most of their parcels and hence expressing a rounded blend of their three terroirs: siderolithic red clay, marl, and kimmeridgian. The linear, acidic, mineral and tense character of the wine from their Kimmeridgian soils is beautifully balanced out by the width and soft texture that comes from the red clay and marl parcels.
