About: From a single- vineyard from Olivier’s two key parcels where the dominant soil type is Schist, with slivers of Quartz as well as phtanites, Olivier recovered this neglected parcel in early 2017, a mammoth undertaking that has paid off.
He is a believer in regenerative farming, aiming to do the absolute minimum amount of ploughing (if any at all), and working with principles of agroforestry as well as introducing animals into the parcels and much more.
The grapes were whole-bunch pressed and fermentation kicked off in tank initially, and finished in a combination of 225L and 450L barrels (old). The wine was left untouched in barrel for 8 months, and bottled with a small sulphite addition.
