Grapes, Sauvignon Blanc
Serving: Chilled (12–14°C)
About: Sauvignon blanc from 3ha of 30year old vines in Verdigny grown over red clay and limestone. The grapes for this cuvée are 30% botrytis, direct pressed and vinified in tanks, aged for two years and then another year in old barrels. This is a fresh cuvee, lifted with clean tropical fruits, a peppery kick leads into a long and saline finish.
Sébastien Riffault has stepped away from the stereotypical Sancerre's that his family has been making for generations and instead embraces the winemaking methods of ancestors before them. Using long macerations and fruit with botrytis to bring his wines to life, these cuvées are unique, intriguing and brilliant.
