About: "The almost-but-not-quite rosé. 100% delicious. An experiment that was due to be added to the pet nat tank, but they decided to barrel age to see what might develop. We’re glad they did.
Hand harvested, basket pressed over 4 hours. Fermented in tank, and aged for 6 months in third-fill oak barrels, to allow a little oxidation to develop."
