About: Chardonnay aged under flor in the typical style of the Jura. Minerality, acidity and nutty oxidative vibes. Inspired by the infamous Vin jaune, this is chardonnay but with an extra saline edge. Crying out for some comté. They serve this at one of Raymond Blanc's venues. Stop messing about.
Marie Pierre Chevassu-Fassenet (mouthfull), began wine studies in Beaune and after an oenology degree at Dijon she worked in New Zealand, Châteauneuf-du-Pape and Champagne before returning to work in the Jura for several years as cellar manager at La Maison du Vigneron (the largest négociant in the Jura).
Now, following in her father's footsteps at their farm (Les Granges-Bernard) in historic Château-Chalon, she tends to all the vines by hand, organically farming and using low intervention methods in the cave.
