About: The grapes were whole bunch pressed prior to fermentation kicking off in steel tanks. Fermentation was eventually stopped by chilling the juice to about 4 degrees as well as with a sulphite addition. The wine stayed on its lees in tank for another five months before racking, filtering, and bottling. Aged for 15 years in bottle prior to release.
The Riesling grapes for this wine come from Dhron Hofberger, a vineyard 40km from Jan’s estate. It sits above the river Dhron, the site of some of the Mosel’s best vineyards. The presence of red slate alongside grey slate gives the wines a slightly more spicy, tangy character, with subtler acidity than wines from Steffensberg, hence allowing the wines to show well even in their youth, though maturing beautifully over time.
