About: Former marine biologists Daniel and Nicola Ham are making delicious natural wines from a converted barn just outside Salisbury. Whilst they make extremely low volumes of wine at the moment, they have big plans to soon have their own farm and vines. Watch this space, a super exciting up and coming producer.
Field Notes 1 is a delicate and complex cuvée that is a beautiful light red in colour. Bundles of notes of red and citrus fruits.
The Pinot Noir and Pinot Blanc grapes grown in Crouch Valley, Essex were sourced by the winemaker. Whole bunches of Pinot Noir were infused into direct pressed juice from the Pinot Blanc . Aged for 11 months in a mixture of acacia barrel, a burgundy barrel that wasn't topped up and a glass carboy that was left outside. Blended and bottled with no fining, filtration or added sulphur.
