Grapes, Grenache, Carignan, Pinotage
Serving: chilled (12–14°C)
About: For now all of the grapes used for MC’s wines come from local organic and biodynamic growers in various zones of the Swartland though primarily from Paardeberg. They are either from leased parcels that he farms, or are bought grapes from trusted growers. As is common in this immediate area, most of the soils are granitic with very sandy topsoils, and the vines are bushvines.
The varieties are fermented and aged separately. About 40% of the Grenache and the Pinotage goes through a full carbonic maceration for 7 days before being pressed and transferred to old 225L barrels. The rest, as well as the Carignan is fermented whole bunch for 8-10 days before pressing and aging in separate 225L. The whole lot is blended after four months and returned to barrels for a further two months of aging before bottling. Unfined and unfiltered.
The spaceman on the label was inspired by the biodynamic principles of the moon and lunar cycles, and this idea that one might explore space and achieve amazing things, but the happiest place is always by the pool with a juicy glass of wine!
