About: In this one-off experiment they picked the best selection of their merlot and vinified it with 100% whole bunch in concrete for 7 days. After a long and soft pressing they transferred the wine back to concrete where it aged for one year. Unfined, unfiltered, tiny so2 addition before bottling.
All of their vines are within Trespoux-Rassiels in the Cahors appellation. This is at the highest altitude in the region, roughly 340-360m, a point that experiences a very high diurnal range and hence leads to a wonderful freshness in the wines. This vineyard sits exclusively on kimmeridgian bedrock with a layer of marl and clay on the top. This gives an unusually mineral character, a tense acidity, and accentuates Malbec’s delicate floral and spicy perfume.
