About: A wine named after a toad. The natterjack toad (crapaud calamite) that is often found when working the soils in the Gard area where the grapes are grown. 70% of the grapes are fermented using the millefeuille technique, where the different varieties are layered on top of each other within the tank, some whole bunch and some destemmed. The remainder goes through semi-carbonic maceration. A very gentle extraction with no pigeage means this wine is a spicy blend of plum fruit flavours, aromatic herbs and expressive dark character. A dead cert for drinking with winter meals.
