Cyril Fahl is a genius winemaker, working biodynamically from old vines on steep slopes in the Pyrenees. So steep in fact, that many other winemakers would deem the land unworkable. Hors Champ is the name given to his more experimental project using fruit bought from close friends, with the aim of creating fresh and fun wines meant for drinking now. And so you should, delicious stuff.
