About: Mad savoury, Fino-esq expression jumping out of the glass. The palate is unmistakeably Sauvignon but in a grown up and serious manner, remaining light and drinkable. Christoph Heiss makes this wine from his families 12ha estate that fully converted to organic in 2018. The grapes come from a plot of Sauvignon planted by Christophe's father in the late 90s in an attempt to diversify the family's wine output, appealing to a more global market using this international varietal. This was at a time when the wines made from indigenous Austrian grapes were not widely bought outside of the country. Ultimately the project tanked and this hectare of Sauvignon has been left unused, doomed to be ripped up and replanted, until Christophe took over and decided to experiment with it. We're glad he did.
