About: The grapes are sourced from vineyards at altitudes varying from 120 to 180 meters above sea level in the town of Felanitx. The climate is Mediterranean, with hot, dry summers and an average of 450 mm rainfall per year. The soil is claycalcareous with abundant pebbles.
After hand-picking and sorting, maceration and fermentation took place in 225- litre Mallorcan tinajas for around a month. Temperature does not exceed 25 degrees during fermentation. The wine then rests in cement tanks before bottling without fining or filtration. No sulphur is used at any stage.
