About: The grapes were destemmed and underwent 3 days of skin contact prior to pressing. The wine then finished fermentation in old barrels and was transferred to a large Alsatian ‘Foudre’ of 1000L where it spent two years. The foudre was not full and the wine hence developed a layer of flor so it was partly aged ‘sous voile.’ After a total of two years it was bottled unfined and unfiltered with a very light sulphur addition.
All of the grapes come from their own vineyards, and all within Trespoux-Rassiels in the Cahors appellation. This is at the highest altitude in the region, roughly 340-360m, a point that experiences a very high diurnal range and hence leads to a wonderful freshness in the wines. This parcel was planted in 2017 in the goal of creating a well adapted white blend to express its provenance as opposed to its varieties. This parcel is only 0.5 hectares.
