About: A 60 / 40 blend of Pinot Blanc and Pinot Noir. This wine is a brilliant orange-pink hue and comes with a brilliantly complex palate. Dried fruit flavours give way to a herbaceous back palate and a long linear finish. The intriguing winemaking process is inspired by French vigneron Daniel Sage. The pinot noir is whole bunch fermented in concrete and then topped up with whole bunch pressed pinot blanc juice. After a five day maceration, the wine is pressed off and aged for a further 6 months in concrete.
