About: As a restaurant buyer and wine lover Patrick Cappiello was always frustrated by the lack of affordable, honest wines from California. Monte Rio, his project with Cali wine giant Pax Mahle, is looking to address that. This unusual white blend is made from organically farmed grapes, fermented in neutral vessels to give a bright wine with a refreshing amount of acidity and some food friendly texture.
Each grape variety was fermented separately. Whole cluster fruit hand harvested directly to the press. Fermentation took place in a combination of stainless steel tanks and old wood barrel using indegenous yeast fermentation.
