About: 15 and 40 year-old vines grown in granitic and basalt. Whole-bunch spontaneous fermentation (ambient yeasts; no temp. control) in fiberglass before some trampling to make space. Then whole bunches are macerated in the juice (a la Daniel Sage's Flotation Method). 15 months élevage in Burgundian barriques before being bottled unfined, unfiltered, no added SO2.
