About: The very ripe grapes are harvested manually in crates. Then, the whole bunches are vinified in the cellar in Martignargues by Simon Le Berre. First of all, the whole bunches are crushed in the vat, then the pumping over is carried out the first few days. Finally we finish with the daily pigeage. In all, there are two weeks of maceration on this cuvée in order to keep a certain lightness on this beautiful Syrah. Before bottling the Naturophile, it is aged for 12 months in resin vats in the cellar.
